Instructions

  1. Make the chili: In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Cook the onion: Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  3. Add chili ingredients: Stir in the chili seasoning mix, diced tomatoes with green chilies, tomato sauce, and kidney beans if using.
  4. Simmer chili: Add water as needed to reach your desired chili consistency. Let the chili simmer over low heat for 10-15 minutes, stirring occasionally. Once ready, remove from heat.
  5. Prepare cheese mixture: In a medium mixing bowl, combine softened cream cheese and sour cream, stirring until smooth.
  6. Combine cheeses: Add the shredded cheddar and mozzarella cheese to the cream cheese mixture and stir until well combined. Reserve a little cheese for topping if desired.
