- 1 fresh pineapple (peeled, cored, and sliced into rings)
- 1 cup all-purpose flour
- 1/4 cup shredded sweetened coconut
- 1 tablespoon sugar

Batter:
- 1 large egg
- 1/2 cup coconut milk
- 1 teaspoon rum extract (or 1 tablespoon light rum)
Other:
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
- Optional: sweet coconut cream or pineapple glaze for dipping
Instructions
- Prepare the Oil: Heat 2–3 inches of vegetable oil in a deep skillet or heavy-bottomed pot over medium heat to 350°F.
- Prepare the Batter: Whisk together flour, shredded coconut, sugar, baking powder, and salt. In a separate bowl, whisk the egg, coconut milk, and rum extract. Combine wet and dry ingredients to form a smooth batter.
- Fry the Rings: Pat pineapple rings dry, dip in batter, and fry in hot oil for 2–3 minutes per side until golden brown. Drain on paper towels.
- Serve: Dust with powdered sugar and enjoy warm with optional coconut cream or pineapple glaze.
Notes
- For an extra tropical twist, sprinkle toasted coconut over the finished rings.
