  • 1 fresh pineapple (peeled, cored, and sliced into rings)
  • 1 cup all-purpose flour
  • 1/4 cup shredded sweetened coconut
  • 1 tablespoon sugar

Batter:

  • 1 large egg
  • 1/2 cup coconut milk
  • 1 teaspoon rum extract (or 1 tablespoon light rum)

Instructions

  1. Prepare the Oil: Heat 2–3 inches of vegetable oil in a deep skillet or heavy-bottomed pot over medium heat to 350°F.
