Eggplant:

  • 2 medium eggplants (sliced into 1/4-inch rounds)
  • 1 teaspoon salt

Breading:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 1/2 cups breadcrumbs (plain or seasoned)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper

  • Vegetable oil for frying

Instructions

  1. Prepare Eggplant: Sprinkle salt on eggplant slices, let sit, pat dry.
  2. Breading Station: Set up three bowls with flour, egg and milk mixture, and breadcrumb mixture.
  3. Coat Eggplant: Dip slices in flour, egg, then breadcrumbs.
  4. Fry: Fry slices in hot oil until golden brown and crispy.
