Description

A fresh twist on the classic green bean casserole featuring tender green beans, creamy Portabella mushroom bisque, crispy French fried onions, and sharp cheddar cheese, baked to bubbly perfection for a comforting side dish.

Ingredients

Scale

Vegetables

  • 1 pound fresh or frozen green beans

Soup & Sauces

  • 1 (16 ounce) jar Zoup! Good, Really Good® Portabella Mushroom Bisque

Cheese & Toppings

  • 1/2 cup freshly grated cheddar cheese
  • 2 cups French’s fried onions (divided)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the top third to ensure even baking and browning of the casserole.
  2. Cook Green Beans: Bring a large pot of water to a boil. Add the green beans: boil fresh beans for 5 minutes or frozen beans for 3 minutes. Drain the beans and immediately rinse them under very cold water to stop the cooking process and preserve their bright green color. Drain thoroughly and transfer to a 9×13-inch casserole dish.
  3. Combine Ingredients: Shake the jar of Portabella Mushroom Bisque well, then pour it over the green beans in the casserole dish. Add half of the French’s fried onions and gently toss all the ingredients together to combine evenly. Spread the mixture into an even layer in the casserole dish.
  4. Add Toppings: Evenly sprinkle the freshly grated cheddar cheese over the top of the green bean mixture. Then, scatter the remaining half of the fried onions evenly over the cheese layer to add a crispy topping.
  5. Bake Casserole: Place the casserole dish in the preheated oven and bake, uncovered, for 20-25 minutes until the casserole is heated through, bubbly, and the topping is golden and crispy. Remove from oven and let it rest for 5 minutes before serving to allow the flavors to meld and the casserole to set.

Notes

  • Blanching the green beans and shocking them in cold water helps maintain their vibrant color and crisp texture.
  • Use freshly grated cheddar cheese for better melting and richer flavor compared to pre-shredded cheese.
  • If you prefer a deeper mushroom flavor, you can sauté fresh mushrooms and add them to the casserole.
  • This casserole can be made ahead and refrigerated; add the fried onions right before baking to keep them crispy.
  • For a gluten-free version, substitute the French’s fried onions with gluten-free crunchy toppings.
