Peaches
- 4 ripe but not overly soft peaches, halved and pitted
- 2-3 teaspoons grapeseed oil (or other neutral tasting oil)
Cheese Topping
- 4 ounces mascarpone cheese or cream cheese
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
Garnish
- ¼ cup balsamic glaze
- Handful of pistachios, lightly chopped
Instructions
- Preheat The Grill: Preheat your grill to medium heat to ensure it’s hot enough for caramelizing the peaches without burning them.
- Prepare and Grill Peaches: Gently brush each peach half with grapeseed oil, then place them cut side down on the grill grates. Cook for 2-3 minutes until grill marks appear and the peaches begin to soften. Use tongs to rotate each peach a quarter turn and grill for an additional 1-2 minutes to evenly caramelize. Remove peaches from the grill and allow to cool slightly.
- Make The Cheese Mixture: In a small bowl, combine mascarpone or cream cheese with powdered sugar and vanilla extract. Use a hand mixer on medium speed to beat the ingredients until the mixture turns light and fluffy. Set aside.
- Assemble and Serve: Just before serving, spoon a small scoop of the mascarpone cheese mixture into the hollow of each grilled peach half. Drizzle balsamic glaze over the peaches, then sprinkle with lightly chopped pistachios for added crunch and flavor.
