Instructions
- Brown the Meat: Heat olive oil in a large pot over medium heat. Add ground beef or turkey and cook until browned, breaking it apart with a spoon, about 5–7 minutes.
- Sauté Aromatics: Add diced onion and minced garlic to the pot and sauté for 2–3 minutes until softened and fragrant.
- Add Seasoning and Veggies: Stir in taco seasoning, Rotel tomatoes with green chilies, black beans, and corn, mixing everything evenly.
- Add Broth and Simmer: Pour in the low-sodium chicken broth and bring the mixture to a simmer over medium heat.
- Melt Cream Cheese: Reduce heat to low and stir in the cubed cream cheese until fully melted and incorporated into the soup for a creamy texture.
- Incorporate Sour Cream: Add sour cream and stir until the soup is smooth and creamy throughout.
- Final Simmer and Seasoning: Let the soup simmer gently for another 5 minutes. Taste and season with salt and pepper as needed.
