These Easy Chocolate Cherry Brownie Parfaits combine rich, fudgy brownie cubes with luscious cherry pie filling and a light, fluffy cream cheese whipped cream for a delightful layered dessert perfect for any occasion.

Brownies

  • 18-20 oz box brownie mix (Ghirardelli Dark Chocolate Brownie Mix recommended), prepared with eggs and oil according to package directions

Cherry Layer

  • 21 oz can cherry pie filling

Cream Cheese Whipped Cream

  • 4 oz cream cheese, at room temperature
  • 1 cup heavy whipping cream
  • 3 Tbsp powdered sugar (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Prepare Brownies: Make the brownies according to the directions on the package. Once baked, allow them to cool, then cut into small cubes. Set aside for assembly.
  2. Whip Cream Cheese: Using an electric mixer, whip the cream cheese in a small bowl until it is soft and fluffy. Set this aside temporarily.
  3. Whip Heavy Cream: Pour the heavy whipping cream into a large bowl and whip on medium speed with an electric mixer until soft peaks form.
  4. Combine Cream Cheese and Whipped Cream: Add the whipped cream cheese to the whipped cream and continue whipping on high speed until stiff peaks form. Then add powdered sugar, pinch of salt, and vanilla extract; whip briefly to combine. Taste and add more powdered sugar if a sweeter flavor is desired. This cream cheese whipped cream can be made up to a day in advance and stored covered in the refrigerator.
  5. Assemble Parfaits: In four parfait glasses, start by layering brownie cubes at the bottom. Add 1-2 tablespoons of cherry pie filling on top of the brownies, followed by 1-2 tablespoons of the cream cheese whipped cream. Repeat these layers to fill the glasses, ending with a layer of whipped cream on top. Optionally, garnish with a cherry. Cover and refrigerate until ready to serve.
