Ingredients
Scale
Cookie Base
- 1 package refrigerated sugar cookie dough
Cream Cheese Topping
- 8 oz cream cheese (softened)
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons milk
Fruit Toppings and Decorations
- Fresh fruit for topping (such as sliced strawberries, blueberries, kiwi, mandarin oranges, raspberries, blackberries)
- Pastel-colored sanding sugar or sprinkles (optional)
Instructions
- Preheat and Prepare the Dough: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking. Slice the refrigerated sugar cookie dough into 1/4-inch thick rounds, then gently shape each round into an oval resembling an Easter egg.
- Bake the Cookies: Arrange the shaped dough ovals evenly on the prepared baking sheet. Bake in the preheated oven for 8–10 minutes or until the edges are lightly golden. Remove from the oven and allow the cookies to cool completely before adding toppings.
- Make the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and 1 tablespoon of milk together until smooth and creamy. Add additional milk (up to 2 tablespoons total) as needed to achieve a spreadable consistency.
- Assemble the Fruit Pizzas: Once the cookies are fully cooled, spread an even layer of the cream cheese mixture over each cookie. Decorate the top with fresh fruit arranged in fun and colorful Easter egg patterns to your liking.
- Optional Decoration and Chill: Sprinkle pastel-colored sanding sugar or sprinkles over the fruit-topped pizzas for extra festive flair. Chill the assembled fruit pizzas in the refrigerator until ready to serve to keep the cream cheese frosting set and the fruit fresh.
