Instructions

  1. Heat Cream Mixture: In a small saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until hot and steaming but not boiling, then remove from heat.
  2. Steep Earl Grey Tea: Add the Earl Grey tea bags or loose-leaf tea to the hot cream mixture. Cover and steep for 10 minutes to infuse the flavor, then strain out the tea leaves or bags.
  3. Bloom Gelatin: While the tea steeps, sprinkle the powdered gelatin over cold water in a small bowl. Let it sit for 5 minutes until the gelatin blooms and absorbs the water.
  4. Dissolve Gelatin: Return the strained cream mixture to low heat. Stir in vanilla extract, then add the bloomed gelatin, stirring continuously until the gelatin is completely dissolved. Remove from heat and allow to cool slightly for about 10 minutes.
  5. Fill Tart Shells: Carefully pour the slightly cooled panna cotta mixture into the prepared tart shells. This step is important to prevent soggy crusts.
  6. Chill Until Set: Place the filled tart shells into the refrigerator for at least 4 hours, allowing the panna cotta to set firmly.
  7. Garnish and Serve: Before serving, decorate the tarts with fresh berries, edible flowers, or a light dusting of powdered sugar to enhance their appearance and flavor.
