Instructions

  1. Prepare Dough: In a large bowl, combine the all-purpose flour, granulated sugar, instant yeast, salt, ground cardamom, and saffron threads. Add the warm whole milk, melted unsalted butter, and egg to the dry ingredients. Mix until a cohesive dough forms.
  2. Knead Dough: Transfer the dough to a floured surface and knead for 6-8 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and allow it to rise in a warm place for 1 to 1.5 hours or until doubled in size.
  3. Make Chocolate Filling: In a small saucepan, heat the heavy cream and butter over medium heat until steaming but not boiling. Pour the hot cream mixture over the chopped dark chocolate in a bowl. Stir gently until the chocolate is fully melted and smooth. Chill this mixture slightly to thicken.
  4. Shape Rolls: Roll out the risen dough into a rectangle approximately 12×16 inches. Evenly spread the chocolate filling over the dough. Starting from one long side, roll the dough tightly into a log. Slice the log into 10 to 12 equal pieces. Place the slices cut side up on a baking tray lined with parchment paper.
