Description

Donkey Balls are a delightful no-bake treat combining creamy peanut butter, crispy Rice Krispies, and a smooth chocolate coating. These bite-sized dessert balls are perfect for a quick snack or a sweet indulgence, offering a satisfying crunch with rich, nutty and chocolate flavors.

Ingredients

Scale

Peanut Butter Mixture

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 1/2 cups Rice Krispies cereal
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother melting)

Instructions

  1. Mix Ingredients: In a large bowl, combine the peanut butter, softened butter, powdered sugar, vanilla extract, and Rice Krispies cereal. Stir until the mixture is thick, well combined, and slightly sticky.
  2. Roll into Balls: Using your hands, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  3. Freeze: Freeze the peanut butter balls for 20–30 minutes or until they are firm enough to handle for dipping.
  4. Melt Chocolate: While the balls chill, melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until smooth and fully melted.
  5. Dip Balls in Chocolate: Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, allowing excess chocolate to drip off before placing them back onto the parchment-lined baking sheet.
  6. Set Chocolate: Refrigerate the chocolate-dipped balls for 15–20 minutes until the chocolate hardens and sets.
  7. Serve: Enjoy chilled or at room temperature as a delicious dessert or snack.

Notes

  • You can substitute crunchy peanut butter for added texture or fold in chopped nuts into the mixture.
  • Store the finished balls in an airtight container in the refrigerator for up to one week.
  • For longer storage, freeze the balls and thaw before serving.
