Peanut Butter Mixture
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 1/2 cups Rice Krispies cereal
- 1 teaspoon vanilla extract
Chocolate Coating
- 2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother melting)
Instructions
- Mix Ingredients: In a large bowl, combine the peanut butter, softened butter, powdered sugar, vanilla extract, and Rice Krispies cereal. Stir until the mixture is thick, well combined, and slightly sticky.
- Roll into Balls: Using your hands, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Freeze: Freeze the peanut butter balls for 20–30 minutes or until they are firm enough to handle for dipping.
- Melt Chocolate: While the balls chill, melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until smooth and fully melted.
- Dip Balls in Chocolate: Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, allowing excess chocolate to drip off before placing them back onto the parchment-lined baking sheet.
- Set Chocolate: Refrigerate the chocolate-dipped balls for 15–20 minutes until the chocolate hardens and sets.
- Serve: Enjoy chilled or at room temperature as a delicious dessert or snack.
