Instructions
- Prepare the Noodles: If using dried noodles, cook them according to the package instructions, then drain and set aside. For fresh noodles, simply set aside to be added to the stir-fry later.
- Marinate the Lamb: In a bowl, combine the thinly sliced lamb with soy sauce, a pinch of salt, and pepper. Allow the mixture to marinate for about 10 minutes to infuse flavors.
- Cook the Aromatics: Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add cumin seeds and sauté for approximately 30 seconds until they release their fragrant aroma.
- Add Garlic and Ginger: Stir in the minced garlic and ginger, cooking them for an additional minute to enhance the flavor base.
- Stir-Fry the Lamb: Add the marinated lamb to the wok and stir-fry for 4 to 5 minutes until it is nearly cooked through but still tender.
- Add the Vegetables: Incorporate the sliced red and green bell peppers along with the onion. Continue stir-frying for 3 to 4 minutes until the vegetables begin to soften while retaining some crunch.
- Combine Noodles and Sauce: Toss in the cooked noodles, then pour in the oyster sauce and chili paste (if using). Stir everything together thoroughly and cook until heated through.
- Adjust Seasoning and Serve: Taste the dish and adjust salt and pepper as needed. Transfer the noodles and lamb stir-fry to a serving platter.
