Description

This Crockpot Pierogi Casserole with Sausage is a hearty and comforting slow cooker meal that layers frozen pierogies with savory smoked sausage, creamy mushroom soup, sour cream, and melted cheddar cheese. Enhanced with sautéed onions, garlic, and smoky paprika, this easy-to-make casserole is perfect for busy days and makes a deliciously cheesy dinner that the whole family will love.

Ingredients

Scale

Pierogi Casserole Ingredients

  • 1 (16-ounce) package frozen pierogies, any variety
  • 1 pound smoked sausage, sliced into rounds
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons butter
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: Spray the inside of a slow cooker with nonstick cooking spray to prevent sticking and ensure easy cleanup.
  2. Sauté Aromatics and Sausage: In a skillet over medium heat, melt the butter. Add diced onion and minced garlic, cooking until softened and fragrant, about 3–4 minutes. Then add the sliced smoked sausage and cook for another 2–3 minutes until lightly browned to develop flavor.
  3. Mix the Sauce: In a large bowl, combine the cream of mushroom soup, sour cream, shredded cheddar cheese, black pepper, and smoked paprika. Stir well until smooth and evenly mixed.
  4. Layer Ingredients in Slow Cooker: Place half of the frozen pierogies in the bottom of the slow cooker. Top them with half of the sausage and onion mixture, then half of the creamy soup mixture. Repeat the layering with the remaining pierogies, sausage mixture, and soup mixture to build the casserole.
  5. Cook: Cover the slow cooker and cook on low for 4 to 5 hours, or until the casserole is heated through and bubbly, ensuring the pierogies are tender and all flavors meld beautifully.
  6. Garnish and Serve: Once cooked, sprinkle chopped fresh parsley over the casserole for a fresh, colorful garnish if desired. Serve warm for a delicious and filling meal.

Notes

  • For a lighter sausage option, use kielbasa or turkey sausage instead of smoked sausage.
  • Enhance the casserole’s flavor and texture by adding chopped bell peppers or mushrooms to the sautéed onions and garlic.
  • You can prepare this casserole the night before; assemble it and refrigerate, then cook it in the slow cooker the next day.
  • If your slow cooker runs hot, check the casserole slightly earlier to avoid overcooking the pierogies.
