  • 1 teaspoon soy sauce (optional)
  • Salt, to taste

  • Fresh cilantro or parsley, chopped (about 1 tablespoon)


Instructions

  1. Prepare the Chili Oil: Heat 1/4 cup olive oil in a small pan over low-medium heat. Add 1 teaspoon red chili flakes and 1 minced garlic clove. Let the oil infuse for 2-3 minutes while stirring occasionally to avoid burning the garlic. Optionally, add 1 teaspoon soy sauce for added flavor. Remove from heat and set aside to cool.
  2. Heat the Skillet: Place a non-stick skillet over medium heat and pour in enough olive or vegetable oil to cover the bottom of the pan, about 2 tablespoons.
  3. Cook the Eggs: Crack 2 eggs into the skillet. Fry for 3-4 minutes or until the edges become crispy. Adjust time for desired yolk doneness — less for runny yolks, more for firm.
