Crepes Batter
- ½ cup lukewarm water
- 1 cup milk (room temperature)
- 4 large eggs
- 4 Tbsp unsalted butter (melted, plus more to sauté)
- 1 cup all-purpose flour (or ½ cup whole wheat flour + ½ cup all-purpose flour)
- 2 Tbsp sugar
- Pinch of salt
Greek Yogurt Filling
- 1 cup Greek yogurt (low fat or fat free acceptable)
- 6 oz cream cheese (¾ of a package, at room temperature)
- â…“ cup granulated sugar
Instructions
- Prepare the Crepe Batter: Place the water, milk, eggs, melted butter, flour, sugar, and salt into a blender in the order listed. Blend on high speed for 1 minute or until the batter is smooth and completely combined.
- Cook the Crepes: Heat a small amount of butter in a good non-stick skillet over medium heat. Pour about 3 tablespoons of batter into the pan and immediately swirl it around to create a thin, even layer. Cook until the bottom is golden, about 1 minute, then flip and cook for an additional 15 seconds. Repeat with the rest of the batter, adding butter as needed.
- Make the Greek Yogurt Cream: In the bowl of a mixer fitted with a whisk attachment, beat the cream cheese and sugar together until smooth. Gradually add the Greek yogurt and continue to beat on medium-high speed until the mixture is creamy and well combined. Set aside or refrigerate if not using immediately.
- Assemble the Crepes: Spread a thin layer of the Greek yogurt cream over each crepe. Roll the crepe or fold it into quarters with the cream inside. Optionally, top with apricot raspberry sauce and fresh berries before serving.
Notes
- For a quicker process, prepare the batter ahead and refrigerate it for at least 30 minutes before cooking.
- You can substitute part of the all-purpose flour with whole wheat flour for a nuttier flavor and added fiber.
