Description

Creamy Ranch Chicken & Noodles is a comforting and flavorful dish featuring tender chicken pieces cooked in a creamy ranch-seasoned sauce with egg noodles. Ready in just 35 minutes, it’s perfect for a satisfying weeknight dinner that requires minimal preparation and delivers rich, savory flavors with a hint of garlic and Parmesan cheese.

Ingredients

Scale

Chicken and Seasoning

  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 packet (1 oz) ranch seasoning mix
  • 3 cloves garlic, minced

Broth and Noodles

  • 4 cups chicken broth
  • 8 oz egg noodles

Creamy Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Garnish

  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Add Broth and Seasoning: Pour in the chicken broth and sprinkle in the ranch seasoning mix. Stir well to combine all the flavors.
  4. Cook Noodles: Bring the mixture to a boil. Add the egg noodles, then reduce the heat to medium-low. Cover the skillet and simmer for 8-10 minutes, or until the noodles are tender.
  5. Finish the Sauce: Stir in the heavy cream, grated Parmesan cheese, and the cooked chicken pieces. Simmer for an additional 2-3 minutes, allowing the sauce to thicken and coat the noodles and chicken beautifully.
  6. Adjust Seasoning: Taste the dish and adjust the seasoning with additional salt and pepper if needed.
  7. Garnish and Serve: Sprinkle with freshly chopped parsley for a pop of color and fresh flavor before serving.

Notes

  • You can substitute chicken thighs for a juicier texture.
  • For a lighter option, use half-and-half instead of heavy cream.
  • Feel free to add vegetables like peas or spinach for added nutrition.
  • Use gluten-free noodles to make this dish gluten free.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove or microwave.
