Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Sauce:
- 2 tablespoons unsalted butter
- 8 ounces cremini or baby bella mushrooms (sliced)
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 6 ounces Brie cheese (rind removed, cut into chunks)
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1/4 teaspoon crushed red pepper flakes (optional)
- Chopped fresh parsley for garnish
Instructions
- Season chicken: Season chicken breasts with salt and pepper on both sides.
- Sear chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 5–6 minutes per side until golden brown and cooked through. Transfer chicken to a plate and cover.
- Cook mushrooms: In the same skillet, reduce heat to medium, add butter. Sauté mushrooms for 5–6 minutes until browned. Add garlic and cook for 30 seconds.
- Make sauce: Pour in chicken broth, stir in heavy cream, bring to a simmer. Add Brie, thyme, and red pepper flakes. Stir until smooth.
- Combine and simmer: Return chicken to the skillet, spoon sauce over. Simmer for 2–3 minutes. Garnish with parsley and serve.

- For a lighter version, use half-and-half instead of heavy cream.
- This dish pairs well with mashed potatoes, rice, or crusty bread.
- Chicken thighs can be substituted for a richer flavor.
