Ingredients
Scale
Chicken
- 2 large chicken breasts (boneless, skinless)
- Salt & pepper (to taste)
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
Vegetables & Seasoning
- 1/2 medium onion (chopped)
- 1 heaping cup frozen mixed vegetables
- 1/2 teaspoon Italian seasoning
Sauce
- 1/3 cup chicken broth
- 1 (10.5 ounce) can condensed cream of chicken soup
- Chopped parsley (optional, to taste)
Instructions
- Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Season them evenly with salt, pepper, and garlic powder to infuse flavor.
- Sear the chicken: Heat olive oil and half the butter in a skillet over medium-high heat. When hot, add the chicken and cook 4-5 minutes per side until golden brown and partially cooked. Transfer the cutlets to a plate.
- Sauté onions: Reduce heat to medium. Add the remaining butter and chopped onions to the skillet. Cook, stirring frequently, for 5-7 minutes until the onions soften and develop a light brown color.
- Cook vegetables: Stir in frozen mixed vegetables and Italian seasoning. Continue cooking for 2-3 minutes, stirring often, allowing the vegetables to warm and absorb flavor.
- Add liquids and soup: Pour in the chicken broth and condensed cream of chicken soup. Stir vigorously to combine into a smooth sauce.
- Simmer chicken in sauce: Lower heat to medium-low and return the chicken cutlets along with any juices back into the skillet. Simmer uncovered for about 5 minutes until chicken reaches 165°F internally and vegetables reach desired tenderness. If sauce thickens too much, add a splash of broth or water to loosen.
- Final seasoning and serving: Taste and adjust salt and pepper as needed. Garnish with chopped parsley if desired, then serve immediately for a warm, comforting meal.
Notes
- Ensure the chicken is cooked through by checking for an internal temperature of 165°F.
- Frozen mixed vegetables can be substituted with fresh vegetables if preferred; adjust cooking time accordingly.
- If the sauce gets too thick during simmering, adding chicken broth or water will help achieve the preferred consistency.
- Using boneless, skinless chicken breasts helps the dish cook evenly and stay tender.
- Optional parsley garnish adds freshness and color but can be omitted.
