Description

Coffee Mixture:

  • 1 cup brewed strong coffee or espresso (cooled)
  • 1/4 cup coffee liqueur (optional)

Mascarpone Filling:

  • 8 oz mascarpone cheese (softened)
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Whipped Cream:

  • 2 cups heavy whipping cream
  • 2 tablespoons granulated sugar

Additional:

  • Unsweetened cocoa powder for dusting
  • Dark chocolate shavings (optional)

Instructions

  1. Prepare the Cake: Bake the cake according to package directions in two 9-inch round cake pans. Let cool and level tops if needed.
  2. Make Coffee Mixture: Combine cooled coffee with coffee liqueur in a small bowl.
  3. Prepare Mascarpone Filling: Beat mascarpone, cream cheese, powdered sugar, and vanilla until smooth.
  4. Whip Cream: In a separate bowl, whip heavy cream with sugar until stiff peaks form. Fold into mascarpone mixture.
  5. Assemble Cake: Layer cake, brushing with coffee mixture and spreading mascarpone filling between layers.
  6. Chill and Serve: Chill for at least 4 hours. Dust with cocoa powder and garnish with chocolate shavings before serving.

Notes

  • For an alcohol-free version, skip the coffee liqueur and use more brewed coffee.
