Instructions
- Prepare the vegetables: Chop the tomatoes into bite-sized pieces, slice the cucumber, and thinly slice the green bell pepper and red onion. Place all the prepared vegetables in a large mixing bowl.
- Add feta and olives: Add the cubed feta cheese and pitted kalamata olives to the bowl containing the vegetables.
- Make the dressing: In a small bowl, whisk together the extra virgin olive oil and red wine vinegar. Season with salt, freshly ground black pepper, and dried oregano, then mix well to combine.
- Dress the salad: Pour the prepared dressing evenly over the salad ingredients in the large mixing bowl.
- Toss the salad: Gently toss all the ingredients together until everything is well combined and coated with the dressing.
- Garnish and serve: Transfer the salad to a serving dish and, if desired, sprinkle freshly chopped parsley on top for added freshness and color.
