Ingredients
Scale
Fresh Ingredients
- 1 cup fresh cilantro leaves, loosely packed (including stems)
- 1 clove garlic
- 1 small jalapeño (seeds removed, optional)
- 2 tablespoons lime juice (from 1 to 2 limes)
Pantry Ingredients
- ¼ cup tahini
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 2 to 3 tablespoons water, or more to thin
- ½ teaspoon sea salt (adjust to taste)
- 1 to 2 teaspoons maple syrup or honey (optional)
Instructions
- Prepare Cilantro: Rinse the cilantro thoroughly under cold water to remove any dirt or grit. Pat dry well with a clean towel or paper towels. You can include the stems as they add flavor and nutrients.
- Combine Ingredients: In a blender or food processor, add the cilantro, tahini, olive oil, lime juice, apple cider vinegar, garlic, and sea salt. If desired, include the seeded jalapeño for a touch of spice and maple syrup or honey for a hint of sweetness.
- Blend Until Smooth: Blend the mixture for 30 to 60 seconds until it becomes creamy and well combined. Gradually add water a tablespoon at a time to achieve your preferred consistency, whether thick or more pourable.
- Taste and Adjust: Taste the dressing and adjust the flavors as needed. Add more lime juice for extra zest, salt to enhance flavor, or water to thin the dressing. You can also add more sweetener or jalapeño to balance heat and sweetness.
- Store and Serve: Transfer the dressing into an airtight jar or container and refrigerate. Shake or stir well before each use. This dressing pairs wonderfully with salads, roasted vegetables, or as a dip.
Notes
- This dressing is vegan if maple syrup is used instead of honey.
- Include cilantro stems for extra flavor; they blend well and add nutrients.
- Adjust the consistency with water depending on whether you want a thick dressing or a lighter drizzle.
- Keep refrigerated in an airtight container for up to 5 days.
- For a milder flavor, omit the jalapeño or use less.
