  • 4 tbsp granola or peanut oil

Instructions

  1. Prepare aromatics: Mince the garlic and fresh ginger finely. In a heatproof bowl, combine the minced garlic and ginger with chili oil, chili flakes if using, salt, and sesame seeds, mixing well to form the base sauce.
  2. Heat oil: Heat granola or peanut oil in a small saucepan until it starts smoking. Carefully pour the hot oil over the chili-garlic mixture in the bowl to release the flavors and slightly cook the aromatics.
  3. Add liquids: Add soy sauce, dark rice vinegar, and a splash of sesame oil to the bowl. Stir the mixture thoroughly ensuring all flavors blend into a spicy, tangy sauce.
  4. Cook noodles: Prepare the udon noodles according to the package instructions, typically boiling them until tender. Drain the noodles well to remove excess water.
  5. Combine and coat: Toss the drained udon noodles with the prepared chili garlic sauce until noodles are well coated.
