- 4 tbsp granola or peanut oil
- Salt, to taste

Instructions
- Prepare aromatics: Mince the garlic and fresh ginger finely. In a heatproof bowl, combine the minced garlic and ginger with chili oil, chili flakes if using, salt, and sesame seeds, mixing well to form the base sauce.
- Heat oil: Heat granola or peanut oil in a small saucepan until it starts smoking. Carefully pour the hot oil over the chili-garlic mixture in the bowl to release the flavors and slightly cook the aromatics.
- Add liquids: Add soy sauce, dark rice vinegar, and a splash of sesame oil to the bowl. Stir the mixture thoroughly ensuring all flavors blend into a spicy, tangy sauce.
- Cook noodles: Prepare the udon noodles according to the package instructions, typically boiling them until tender. Drain the noodles well to remove excess water.
- Combine and coat: Toss the drained udon noodles with the prepared chili garlic sauce until noodles are well coated.
- Optional garnish: Fry an egg to your desired doneness and add as a garnish on top of the noodles. Sprinkle with sliced spring onion greens and additional sesame seeds for extra flavor and presentation.
- Serve: Plate the noodles immediately to enjoy the spicy, garlicky flavors at their freshest.
