Instructions
- Mix Ingredients: In a medium bowl or jar, whisk together the chia seeds, coconut milk, maple syrup or honey, and vanilla extract until thoroughly combined.
- Initial Rest: Let the mixture sit at room temperature for 5 minutes to allow the chia seeds to begin absorbing the liquid.
- Re-Whisk: Whisk again after 5 minutes to break up any clumps and ensure an even texture.
- Chill: Cover and refrigerate the mixture for at least 4 hours or overnight until it thickens to a creamy pudding consistency.
- Serve: Stir the pudding well before serving. Spoon into individual serving dishes and top with fresh mixed berries. Garnish with shredded coconut or mint leaves if desired. Serve chilled.
