Mashed Potato Puffs:

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Nonstick cooking spray


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F. Lightly grease a 12-cup muffin tin with nonstick spray.
  2. Mix Ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, Parmesan, sour cream, chives, garlic powder, salt, and pepper. Stir until well blended.
  3. Fill Muffin Cups: Spoon the mixture evenly into the muffin cups, filling each about 3/4 full.
