Mashed Potato Puffs:
- 2 cups mashed potatoes (cooled)
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream
- 2 tablespoons chopped chives or green onions
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Nonstick cooking spray
Instructions
- Preheat the Oven: Preheat the oven to 400°F. Lightly grease a 12-cup muffin tin with nonstick spray.
- Mix Ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, Parmesan, sour cream, chives, garlic powder, salt, and pepper. Stir until well blended.
- Fill Muffin Cups: Spoon the mixture evenly into the muffin cups, filling each about 3/4 full.
- Bake: Bake for 20–25 minutes, or until golden brown on top and set in the center.
- Cool and Serve: Let cool for a few minutes, then carefully remove from the pan. Serve warm, garnished with extra chives if desired.
