Instructions
- Preheat and prepare baking dish: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Make the filling: In a medium bowl, combine the shredded chicken or ground beef (if using), 1 cup of shredded cheese, sour cream, diced onion, garlic powder, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well blended.
- Layer enchiladas: Spread a few tablespoons of enchilada sauce evenly on the bottom of the prepared baking dish. Fill each corn tortilla with 2 to 3 tablespoons of the filling mixture, roll them tightly, and place them seam-side down in the dish.
- Add sauce and cheese topping: Once all the rolled tortillas are placed in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the remaining 1 cup of shredded cheese evenly to cover the enchiladas.
