Description

Cheesy Enchiladas Bake is a delicious and comforting Mexican-inspired main course featuring corn tortillas filled with a savory mixture of shredded chicken or ground beef, cheese, and spices, all baked in a rich enchilada sauce and topped with melted cheese. Perfect for a family dinner, this easy-to-make casserole delivers bold flavors and gooey cheese in every bite.

Ingredients

Scale

Filling

  • 8 corn tortillas
  • 2 cups shredded cooked chicken or ground beef (optional)
  • 1 cup shredded Mexican blend cheese (for filling)
  • 1/2 cup sour cream
  • 1/2 cup diced onion
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste

Toppings and Sauce

  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded Mexican blend cheese (for topping)
  • Chopped cilantro for garnish (optional)
  • Sliced green onions for garnish (optional)

Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Make the filling: In a medium bowl, combine the shredded chicken or ground beef (if using), 1 cup of shredded cheese, sour cream, diced onion, garlic powder, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well blended.
  3. Layer enchiladas: Spread a few tablespoons of enchilada sauce evenly on the bottom of the prepared baking dish. Fill each corn tortilla with 2 to 3 tablespoons of the filling mixture, roll them tightly, and place them seam-side down in the dish.
  4. Add sauce and cheese topping: Once all the rolled tortillas are placed in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the remaining 1 cup of shredded cheese evenly to cover the enchiladas.
  5. Bake covered: Cover the dish tightly with foil and bake in the preheated oven for 20 minutes to allow the flavors to meld and cheese to melt.
  6. Bake uncovered: Remove the foil and continue baking for another 10 minutes or until the cheese is bubbly and golden.
  7. Garnish and serve: Allow the enchiladas to cool slightly before garnishing with chopped cilantro and sliced green onions, then serve warm.

Notes

  • Substitute refried beans or black beans for meat to make a vegetarian version.
  • Add chopped green chiles or jalapeños to the filling mixture for an extra spicy kick.
  • Serve alongside Mexican rice, guacamole, or a fresh salad for a complete meal.
