- Assemble quesadillas: Lay the flour tortillas flat on a clean surface. Sprinkle 1/2 cup of shredded Mexican blend cheese on one half of each tortilla. Spoon the prepared chicken mixture evenly over the cheese layer, then top with another 1/2 cup of shredded cheese. Fold the tortillas over to form half-moon shapes, pressing down gently to seal.
- Cook quesadillas: Heat olive oil or butter in a large skillet over medium heat.
