- 1/2 cup shredded cheddar cheese

- 12 egg roll wrappers
- Oil for frying (vegetable or canola oil)

- 1/4 cup mayonnaise

- 1 teaspoon mustard

Instructions
- Cook the filling: In a skillet over medium heat, cook the ground beef and finely diced onion until the beef is browned and the onion is soft. Drain any excess grease. Stir in shredded cheddar cheese, yellow mustard, ketchup, diced pickles if using, and season with salt and pepper. Remove the mixture from heat and let it cool slightly to handle.
- Assemble the egg rolls: Lay one egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the beef filling in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides inward, and roll tightly towards the top corner. Seal the edge by brushing with a little water to prevent the egg roll from unwrapping during frying.
- Heat the oil: Pour 1 to 2 inches of vegetable or canola oil into a deep skillet or pan and heat it to 350°F (180°C), ensuring the oil is hot enough to fry the egg rolls evenly.
- Fry the egg rolls: Carefully place the prepared egg rolls in the hot oil in batches, making sure not to overcrowd the pan. Fry each egg roll for about 3 to 4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels to absorb excess oil.
- Prepare the dipping sauce: In a small bowl, combine mayonnaise, ketchup, mustard, and pickle juice or diced pickles. Season with salt and pepper to taste and stir until well mixed.
