Cookie Layer:
- 1 tablespoon unsalted butter
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar
- 1/8 teaspoon vanilla extract
- 1 tablespoon beaten egg (or use a teaspoon of milk as a sub)
- 2 tablespoons all-purpose flour
- 1 tablespoon mini chocolate chips
Brownie Layer:
- 1 tablespoon unsalted butter
- 1 tablespoon granulated sugar
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon beaten egg
- 1 tablespoon all-purpose flour
- pinch of salt
- 1 tablespoon mini chocolate chips
Instructions
- Preheat the oven or toaster oven to 350°F. Lightly grease a ramekin or small oven-safe dish (6 to 8 oz size).
- Make the cookie layer: In a small bowl, melt 1 tablespoon butter. Stir in granulated sugar, brown sugar, vanilla, and egg. Add flour and mix until combined. Stir in chocolate chips and set aside.
- Make the brownie layer: In another bowl, melt 1 tablespoon butter. Stir in sugar, cocoa powder, and egg. Add flour, salt, and mix until smooth. Stir in chocolate chips.
- Layer the brownie mixture into the bottom of the prepared ramekin, then gently spread the cookie dough on top. Bake for 18–22 minutes, or until the top is golden and the center is just set. Let cool for 5 minutes before enjoying warm with a scoop of ice cream if desired.
Notes
- You can microwave this instead of baking—cook on high for 45–60 seconds, but the texture will be more cake-like than chewy.
