Instructions
- Heat the Skillet: Place a large skillet over medium heat and add the olive oil, allowing it to warm up.
- Cook the Tortillas: Add tortillas one at a time to the hot skillet, cooking each for 1 to 2 minutes per side until golden and crispy.
- Drain Excess Oil: Remove the toasted tortillas and set them on paper towels to absorb extra oil.
- Cook the Eggs: Crack eggs directly into the same skillet; season with salt and pepper, and cook them to preferred doneness—scrambled or sunny side up.
- Warm the Black Beans: While eggs cook, gently heat black beans in a small saucepan over low heat for 2 to 3 minutes, stirring occasionally.
- Assemble the Tostadas: Spread a layer of warm black beans over each crispy tortilla, then top each with one cooked egg.
- Add Cheese and Melt: Sprinkle shredded cheddar cheese evenly over the eggs and beans, and return tortillas to the skillet for 1 to 2 minutes to let the cheese melt slightly.
