Description

Delicious and easy-to-make breakfast tostadas featuring crispy tortillas layered with warm black beans, perfectly cooked eggs, melted cheddar cheese, fresh green onions, and zesty salsa. A satisfying and flavorful morning meal with optional hot sauce or sour cream for added kick.

Ingredients

Scale

Eggs and Toppings

  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup salsa
  • Optional: hot sauce or sour cream for serving

Base and Seasoning

  • 4 small flour or corn tortillas
  • 1/2 cup cooked black beans
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the Skillet: Place a large skillet over medium heat and add the olive oil, allowing it to warm up.
  2. Cook the Tortillas: Add tortillas one at a time to the hot skillet, cooking each for 1 to 2 minutes per side until golden and crispy.
  3. Drain Excess Oil: Remove the toasted tortillas and set them on paper towels to absorb extra oil.
  4. Cook the Eggs: Crack eggs directly into the same skillet; season with salt and pepper, and cook them to preferred doneness—scrambled or sunny side up.
  5. Warm the Black Beans: While eggs cook, gently heat black beans in a small saucepan over low heat for 2 to 3 minutes, stirring occasionally.
  6. Assemble the Tostadas: Spread a layer of warm black beans over each crispy tortilla, then top each with one cooked egg.
  7. Add Cheese and Melt: Sprinkle shredded cheddar cheese evenly over the eggs and beans, and return tortillas to the skillet for 1 to 2 minutes to let the cheese melt slightly.
  8. Finish with Toppings: Remove from heat and add chopped green onions and a spoonful of salsa atop each tostada.
  9. Optional Extras: Drizzle hot sauce or a dollop of sour cream over each tostada if desired.
  10. Serve: Serve immediately and enjoy these warm, flavorful breakfast tostadas.

Notes

  • Use either flour or corn tortillas based on your preference or dietary needs.
  • For extra protein, you may add cooked sausage or bacon.
  • Adjust the seasoning and toppings to suit your taste; avocado or cilantro make excellent additions.
  • Leftover tostadas can be stored and gently reheated in a skillet to maintain crispiness.
