Garlic Pizza Sauce

Instructions
- Melt the Butter: In a medium saucepan, melt the butter over medium heat to create the base for your roux and garlic flavor.
- Sauté the Garlic: Add minced garlic to the melted butter and sauté for 30–60 seconds until fragrant, being careful not to brown the garlic to avoid bitterness.
- Make the Roux: Whisk in the all-purpose flour and cook for 1–2 minutes, stirring constantly until the mixture becomes golden and bubbly. This step cooks out the raw flour taste.
- Add the Milk: Slowly pour in the whole milk while whisking continuously to prevent lumps. Simmer the sauce for 2–3 minutes, stirring often, until it thickens to a creamy consistency.
- Season and Add Cheese: Stir in salt, black pepper, and grated Parmesan cheese, mixing until the cheese melts completely and the sauce is smooth.
- Finish and Cool: Remove the sauce from heat, stir in a splash of heavy cream for extra richness, and add red pepper flakes and Italian seasoning to taste. Let the sauce cool slightly before spreading it on your pizza dough. Garnish with fresh chopped herbs if desired. Store leftovers in the refrigerator for up to 5 days.
