Blueberry Sauce
- ½ cup fresh blueberries

- 8 ounces goat cheese log (cut into 6 pieces)
Instructions
- Make Blueberry Sauce: Add blueberries and honey (or other sweetener of choice) to a medium-sized bowl. Microwave for 30-60 seconds until blueberries begin to expand and some burst. Mash the berries with a slotted metal spoon or potato masher until a thick sauce forms. Stir in lemon juice, vanilla extract, and a pinch of salt. Place the sauce in the freezer for 15-20 minutes until it cools completely.
- Mix Goat Cheese: Cut the goat cheese into 6 pieces. Stir the goat cheese pieces into the cooled blueberry sauce, mixing until just combined. The mixture will be slightly clumpy, with big chunks of goat cheese throughout. If needed, return to the freezer for another 15 minutes to firm up.
- Form into Log: Lay two pieces of 15-inch long plastic wrap crossing in a plus sign on a flat surface. Place the blueberry goat cheese mixture on the horizontal piece of plastic wrap and shape it into a log. Wrap tightly with the horizontal plastic wrap first, then wrap again with the vertical piece to reinforce the shape. Twist both ends to seal securely.
- Refrigerate and Serve: Refrigerate the log for 2 to 4 hours until firm, or freeze for 30 to 45 minutes for a quicker firming. Before serving, bring to room temperature. Serve with crackers and enjoy this creamy, fruity appetizer.
