Description

These Blueberry Energy Balls are a quick and nutritious snack packed with freeze-dried blueberries, seeds, oats, and dates. Perfect for a healthy energy boost, they require no cooking and can be prepared in minutes using a food processor.

  • 1/2 cup freeze dried blueberries
  • 1/2 cup sesame seeds
  • 1/2 cup raw unsalted sunflower seeds
  • 1 cup old fashioned or quick oats
  • 1/2 teaspoon ground cinnamon

Wet Ingredients

  • 10 Medjool dates, pits removed
  • 1 tablespoon water


Instructions

  1. Combine Ingredients: Add all of the dry ingredients along with the dates to a food processor. Pulse and process together for about 20 seconds until partly combined. Add 1 tablespoon of water to help the mixture bind more easily.
  2. Process into a Dough: Continue processing the mixture for about 1 minute until the ingredients start to come together into one cohesive ball of dough.
  3. Form Balls: Transfer the mixture to a clean work surface. Divide the dough into 16 equal portions and roll each portion between your hands to form individual energy balls.
  4. Store Properly: Place the energy balls in an airtight container and store them in the refrigerator to keep fresh and firm.
