Ingredients
Scale
Dry Ingredients
- 1 1/2 cups oat flour
- 1/2 cup vanilla protein powder
- 1/4 teaspoon salt
Wet Ingredients
- 1/4 cup almond butter or cashew butter
- 1/4 cup maple syrup or honey
- 1/4 cup unsweetened almond milk (more if needed)
- 1 teaspoon vanilla extract
Add-ins
- 2 tablespoons rainbow sprinkles
- 2 tablespoons white chocolate chips (optional)
Instructions
- Combine Dry Ingredients: In a large mixing bowl, mix the oat flour, vanilla protein powder, and salt until evenly combined.
- Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, maple syrup, almond milk, and vanilla extract until the mixture is smooth and well blended.
- Form the Dough: Pour the wet ingredients into the dry ingredients and stir until a thick dough forms. If the dough feels too dry, add a splash more almond milk to reach the desired consistency.
- Add Sprinkles and Chocolate Chips: Gently fold in the rainbow sprinkles and white chocolate chips if using, distributing them evenly throughout the dough.
- Press and Chill: Press the mixture evenly into a parchment-lined 8×8-inch baking dish to form a compact layer. Refrigerate for at least 1 hour to allow the bars to set firmly.
- Cut and Store: After chilling, cut into 8 bars. Store the bars in an airtight container in the refrigerator for up to one week.
Notes
- Substitute oat flour with almond flour or a mix of both for different texture and flavor.
- Use plant-based protein powder and maple syrup to make a fully vegan version of these bars.
- For longer storage, freeze the bars and thaw before eating.
