  • 1/4 cup unsweetened almond milk (more if needed)
  • 1 teaspoon vanilla extract

  • 2 tablespoons rainbow sprinkles
  • 2 tablespoons white chocolate chips (optional)


Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, mix the oat flour, vanilla protein powder, and salt until evenly combined.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, maple syrup, almond milk, and vanilla extract until the mixture is smooth and well blended.
  3. Form the Dough: Pour the wet ingredients into the dry ingredients and stir until a thick dough forms. If the dough feels too dry, add a splash more almond milk to reach the desired consistency.
  4. Add Sprinkles and Chocolate Chips: Gently fold in the rainbow sprinkles and white chocolate chips if using, distributing them evenly throughout the dough.
  5. Press and Chill: Press the mixture evenly into a parchment-lined 8×8-inch baking dish to form a compact layer. Refrigerate for at least 1 hour to allow the bars to set firmly.
  6. Cut and Store: After chilling, cut into 8 bars. Store the bars in an airtight container in the refrigerator for up to one week.
