Description

Bell Pepper Eggs is a simple and healthy breakfast recipe that combines fresh bell pepper rings with perfectly cooked eggs. The eggs are cooked inside the bell pepper slices on the stovetop, making a colorful and nutritious start to your day. This recipe is quick, easy, and perfect for a low-carb meal option.

Ingredients

Scale

Ingredients

  • 1 bell pepper, sliced into 1/4 inch rings
  • 4 eggs
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • Cooking spray or olive oil, for greasing the skillet
  • Optional: fresh herbs such as parsley, green onions, or basil for garnish

Instructions

  1. Prepare the skillet: Heat a skillet over medium heat. Lightly grease the skillet using cooking spray or a small amount of olive oil to prevent sticking.
  2. Cook the eggs in bell pepper rings: Place 3 to 4 bell pepper rings on the skillet, depending on the size of your pan. Carefully crack an egg inside each bell pepper ring. It is fine if some egg whites spill outside the ring. Add 1 to 2 tablespoons of water to the skillet and immediately cover it to allow steam to help cook the eggs evenly. Cook for 2 to 4 minutes.
  3. Continue cooking uncovered: Remove the lid and cook the eggs further until the whites are fully set and the yolks reach your desired consistency, whether runny or firm.
  4. Season and serve: Transfer the cooked bell pepper eggs to a plate. Sprinkle with kosher salt and ground black pepper to taste. Optionally, garnish with fresh herbs like parsley, green onions, or basil for extra flavor and color.

Notes

  • Using fresh bell peppers provides the best flavor and texture.
  • Adjust cooking time according to how you prefer your egg yolks—shorter for runny yolks and longer for firm yolks.
  • You can customize this recipe by adding cheese or other seasonings inside the bell pepper ring before cooking.
  • Be careful when cracking the eggs directly into the bell pepper rings to avoid excessive spilling.
  • This recipe is naturally gluten-free and can be made vegetarian.
