For the Spring Rolls

- 1 cup shredded red cabbage
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 8–10 rice paper wrappers

For the Peanut Lime Sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon fresh lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1–2 tablespoons warm water (to thin)
Instructions
- Cook the Beef: Heat sesame oil in a skillet over medium heat. Add ground beef and cook, breaking it apart with a spatula, until browned. Stir in minced garlic, soy sauce, grated ginger, and sriracha if using. Continue cooking for 1–2 more minutes, then remove from heat and allow to cool slightly.
- Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 10–15 seconds until it becomes soft and pliable. Lay it flat on a clean surface, ready for filling.
- Assemble Spring Rolls: Place a small portion of cooked beef, shredded carrots, shredded red cabbage, chopped cilantro, and green onions across the center of the softened wrapper. Fold the sides over the filling, then roll tightly from one end to the other, similar to a burrito. Repeat this process with the remaining wrappers and ingredients.
- Prepare Peanut Lime Sauce: In a bowl, whisk together creamy peanut butter, soy sauce, fresh lime juice, honey or maple syrup, sesame oil, and warm water until smooth and well combined. Adjust water to reach your desired consistency.
- Serve: Arrange the spring rolls on a serving platter. Garnish with chopped roasted peanuts. Serve alongside the peanut lime sauce for dipping.
