Description

This Beef Guacamole Grilled Cheese Sandwich combines seasoned ground beef, melted cheddar and pepper jack cheeses, and creamy guacamole layered between buttery toasted sourdough bread. A flavorful twist on classic grilled cheese, perfect for a hearty, Tex-Mex-inspired meal.

Bread and Butter

  • 8 slices of bread (sourdough or your choice)
  • 2 tablespoons butter, softened

Beef Mixture

  • 1 lb ground beef
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Cheese and Guacamole

  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup guacamole (homemade or store-bought)


Instructions

  1. Cook the seasoned beef: In a skillet over medium heat, cook the ground beef with chili powder, cumin, garlic powder, salt, and pepper until browned and fully cooked, about 6–8 minutes. Drain excess fat and set the beef aside.
  2. Assemble the sandwiches: Butter one side of each bread slice. Place 4 slices butter side down on a flat surface. On each, layer shredded cheddar cheese, a scoop of the cooked seasoned beef, a generous spoonful of guacamole, and shredded pepper jack cheese. Top with the remaining bread slices, butter side up.
  3. Grill the sandwiches: Heat a skillet or griddle over medium heat. Cook the sandwiches for 3 to 4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheeses have melted. Serve immediately while warm and gooey.
