- Prepare Zucchini: Trim off the ends of the zucchini. Cut each zucchini in half lengthwise, then cut each half in half lengthwise again to make four long pieces per zucchini. Finally, slice these pieces into fry-shaped sticks, aiming for consistent size to ensure even cooking.
- Mix Flour and Seasonings: In a clean bowl, combine the flour, dried parsley, dried oregano, and kosher salt. Stir well to evenly distribute the seasonings throughout the flour.
- Beat Eggs: In a second bowl, crack the eggs and whisk until fully combined.
- Prepare Breadcrumbs: Place the plain or seasoned breadcrumbs in a third bowl, ready for coating.
- Bread the Zucchini: Take each zucchini fry one at a time. First, fully coat it in the seasoned flour mixture. Next, dip it into the beaten eggs, ensuring it is completely covered. Finally, coat it thoroughly with the breadcrumbs. Place the breaded zucchini fries onto the prepared sheet pan. Repeat this process for all zucchini fries.
