Fritter Batter
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2/3 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, melted
- 1 1/2 cups finely chopped apples (peeled, such as Granny Smith or Honeycrisp)
- Vegetable oil for frying
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg until well combined.
- Combine Wet Ingredients: In a separate bowl, whisk the whole milk, large eggs, vanilla extract, and melted unsalted butter until smooth and fully incorporated.
- Make Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined, being careful not to overmix. Then fold in the finely chopped apples evenly throughout the batter.
- Heat Oil: Pour about 2 inches of vegetable oil into a deep skillet or heavy-bottomed pot and heat to 350°F (175°C). Use a thermometer to ensure proper frying temperature.
- Fry Fritter Bites: Using a heaping tablespoon or small cookie scoop, carefully drop 4–5 batter spoonfuls into the hot oil at a time. Fry for 2–3 minutes per side, turning as needed, until the fritters are golden brown and cooked through.
- Drain and Cool: Remove the fritter bites from the oil with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
- Make Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust milk quantity to achieve desired glaze thickness.
- Glaze Fritter Bites: Dip each warm fritter bite into the glaze or drizzle the glaze over the top. Allow the glaze to set for a few minutes before serving.

- Use a small cookie scoop for evenly sized fritters to ensure consistent cooking.
- For a thicker glaze, reduce the amount of milk; for a thinner glaze or drizzle, increase the milk slightly.
- These fritters are best served warm but can be reheated in the oven to regain crispness.
