- 1 tablespoon cornmeal
- 2 teaspoons baking powder

- 1/2 teaspoon black pepper
Wet Ingredients:
- 1/2 cup milk
- 1 large egg
- 2 cups finely chopped sweet onions
Additional:
- Vegetable oil, for frying
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, salt, and pepper.
- Combine Wet Ingredients: In a separate bowl, whisk the milk and egg. Pour the wet ingredients into the dry and stir until combined. Fold in the chopped onions.
- Fry Fritters: Heat oil in a skillet. Drop spoonfuls of batter into the hot oil, flatten slightly, and fry for 2-3 minutes per side until golden brown and crispy.
- Drain and Serve: Remove fritters with a slotted spoon, drain on paper towels, and serve warm with optional dipping sauce.
Notes
- Use Vidalia or other sweet onions for best flavor.
- Best served immediately but can be kept warm in a 200°F oven while frying the rest.
